In this work, cinnamaldehyde was reversibly anchored to chitosan films via imino-covalent bonding. The Schiffbase was synthesized in solid phase employing neutralized chitosan films immersed in acidified 95 % (v/v)ethanolic solution in which the aldehyde was dissolved. The substitution degree (%) of cinnamaldehyde to theamine group was close to 70 %. Attenuated total reflectanceFourier transform infrared spectroscopy (ATR-FTIR) analysis revealed the formation of the chitosan-cinnamaldehyde Schiff base. The hydrolysis of the iminobond and subsequent release of cinnamaldehyde were studied after the films had been subjected to differentcombinations of temperature/time treatments simulating food preservation methods. The amount of aldehydethat remained covalently attached to the films was monitored by ATR-FTIR, and the substitution degree wasdetermined by elemental analysis. Surface contact angle and colour parameters of cinnamaldehyde-imine-chitosan films and these films subjected to different treatments were also evaluated. The antimicrobialproperties of chitosan-Schiff base films were tested in vitro against Staphylococcus aureus and Escherichia coliand in milk inoculated with Listeria monocytogenes. The antimicrobial activity varied depending on thetreatment applied and consequently the degree of imino bond hydrolysis achieved and cinnamaldehydereleased. Films of Schiff base-chitosan derivative subjected to different time/temperature treatments inhibitedthe growth of L. monocytogenes for 12 days under refrigeration conditions, which may extend themicrobiological shelf life of such products. Sensory analysis of milk in contact with the films showed that acinnamon smell does not cause any rejection among potential consumers. These novel films could be used inthe design of antimicrobial food packaging and in various other technological areas where sustained-releasesystems are required.

A device for measuring the oxygen concentration inside packages inmodified atmosphere working in a completely non-intrusive way has beendeveloped and tested. The device uses tunable diode laser spectroscopyin a geometry similar to a short distance LIDAR: A laser beam is sentthrough the top film of a food package, and the absorption is measured bydetecting the light scattered by the bottom of the container or by a portionof the food herein contained. The device can operate completely in acontactless way from the package, and the distances of absorption bothoutside and inside the package are measured with a triangulation system. The performances of the device have been tested for various types ofcontainers, and absolute values for the oxygen concentration have beencompared with standard albeit destructive measurements.

From 2008 to 2014, stored product mites have been reported from prepackaged dried food on the market in theCzech Republic. The infestation was by Carpoglyphus lactis (L.) in dried fruits and Tyrophagus putrescentiae(Schrank) in dog feed. The infestation is presumably caused by poor protection of the packages. We comparedvarious packaging methods for their resistance to mites using dried apricots and dog feed in laboratoryexperiments. The trial packages included nine different plastic films, monofilm, duplex and triplex, and one typeof plastic cup (ten replicates per packaging type). All packaging materials are available on the Czech market fordried food products. The samples of dried food were professionally packed in a factory and packaged driedapricots were exposed to C. lactis and dog food to T. putrescentiae. After 3 months of exposure, the infestationand mite density of the prepackaged food was assessed. Mites were found to infest six types of packages. Ofthe packaging types with mites, 15 samples were infested and the maximum abundance was 1,900 mites g1of dried food. Mites entered the prepackaged food by faulty sealing. Inadequate sealing is suggested to be themajor cause of the emerged infestation of dried food.

Abstract The effect of combination of phyto-extracts (sea buckthorn extract (SBTE), grape seed extract (GSE))on different physico-chemical, oxidative stability, instrumental colour and texture, sensory and microbiologicalproperties of pork patties were investigated under aerobic and MAP (50 % CO2: 50 % N2) packagingconditions. Treatments viz. T-1 (aerobic packaged control), T-2 (aerobic packaged containing 0.3 % SBTE+0.1 % GSE), T-3 (MAP packaged control) and T-4 (MAP packaged containing 0.3 % SBTE+ 0.1 % GSE) at 41 C for 35 days and samples were drawn at 7 days interval. The pH decreased initially up to 21 days andthereafter increased on further storage whereas water activity followed a decreasing trend throughout thestorage period, irrespective of the treatment and packaging conditions. Results of oxidative stability parametersrevealed that peroxide value, TBARS and FFA followed an increasing trend in both the packaging groupsduring storage however, the rate of increase was significantly lower (P

Publication date: 17 January 2015. Source: Journal of Stored ProductsResearch Author(s): Heon-Joo Jo , Ki-Moon Park , Ja Hyun Na , Sea C.Min , Ki Hwan Park , Pahn-Shick Chang , Jaejoon Han. Anti-insectpackaging films containing cinnamon oil (CO) encapsulated by polyvinylalcohol (PVA) for repelling Plodia interpunctella (Hbner) larvae weremanufactured using pilot plant scale instruments. The microcapsuleemulsion of CO and PVA was printed onto polypropylene (PP) film as anink mixture using the gravure printing method. The printed PP film wasthen laminated with a low-density polyethylene (LDPE) film to protect theprinted side. Four types of multilayer films were produced: control film, 2%CO film, encapsulated 1% CO film, and encapsulated 2% CO film. Whenmechanical properties were assessed, tensile strength and elongation-at-break were not significantly different among films, whereas the Young'smodulus values were different between the control film and the three typesof CO-containing films. In a repellent test, 2% CO film repelledP. interpunctella larvae most effectively. For sensory evaluation, which wasperformed using milk chocolate, caramel soft candy, and cookiespackaged with the produced films, the produced films did not affect thesensory characteristics. Therefore, the films printed with emulsions of COand PVA could be applied in the food industry to help protect foods frominfestation by P. interpunctella.

Abstract The growing consumer demand for healthy snacks has turned theinterest of industry and research in the development of new ready-to-eatproducts, enriched with dietary fibers. Inulin is a soluble fiber with a neutraltaste that promotes the good function of the intestine. Rice flour extrudateswere produced under various extrusion temperatures, screw speeds, feedmoisture concentrations and inulin replacement levels. The objective ofthis study was to investigate the effect of the material characteristics andthe extrusion conditions on the structural and textural properties of theextrudates. Simple mathematical models were used for propertiescorrelation with process conditions and through regression analysis it wasrevealed that there is a significant effect of extrusion temperature, screwspeed, feed moisture content and inulin concentration on the finalproperties. Both density and maximum stress increased when moisturecontent and inulin concentration increased, while they decreased whenextrusion temperature and screw speed increased. These results werealso strengthened by scanning electron microscopy. The highestexpansion ratio was presented when decreasing all process conditionsapart from screw speed.

This work examines the effects of packaging using two different polymeric trays with hinged lids, polyethyleneterephthalate (PET) and polylactic acid (PLA), on fresh-cut and cooked spinach (Spinacia oleracea). Sampleswere stored in a cold room for 16 days at 4 C. Chemical (total pigments, total polyphenols, ascorbic acid, antioxidant activity), physical (water activity), technological (colour evaluation), sensorial (aroma, visualappearance and water accumulation) and microbial (total aerobic mesophilic and psychrotrophic counts)parameters were tested. Both polymeric trays maintained the overall quality of fresh spinach for 6 days butspinach stored in PLA trays maintained its flavour longer. A significant increase in total polyphenols, antiradicalactivity, total carotenoids as well as a decrease in ascorbic acid in fresh spinach was observed in the first3 days of storage in both samples. Unfortunately, the PLA package accumulated condensed water. The totalmicrobial load of fresh-cut spinach reached about 6.37.3 log CFU g1 within 8 days. Cooked spinach packed inPLA and PET polymeric hinged trays showed the same behaviour as fresh spinach in terms of quality and shelflife. In conclusion, PLA plastic hinged trays can be used for packaging fresh-cut and cooked cut spinach, butthe problem of condensed water must be solved.

The use of polyvinyl chloride (PVC) in food packaging is mainly related to the plasticity of the same materialwhen used in wrapping films and in gaskets for metal closures (applications: glass jars and bottles). Anyway, main required characteristics are the flexibility, the softness and the possibility of being used for wrapping filmsand hermetic closures. Pure PVC is a rigid material, but it may also be mixed in remarkable proportions withother substances: the final product may become flexible, soft and plastic. Many plasticisers may be used in theEuropean Union in accordance with the Regulation (EU) No. 10/2011 on plastic materials and articles intendedto come into contact with food. In relation to food contact-approved PVC materials, inglobated plasticisers cangradually migrate from the plasticised object to foods depending on the influence of factors such as thetemperature or the physical medium (solvent, food). The Regulation (EU) No. 10/2011 provides specificmigration limits for different plasticisers. The analytical control of these limits in foods and/or in food simulantsis important by the viewpoint of food safety. Currently available and used methods for the evaluation of specificmigration are reviewed in this paper.

Although it has captured the public imagination, bioprinting fully functioningvascularized whole organs won't become a reality any time soon. Nor doesit need to, says Ibrahim Ozbolat, Assistant Professor of Mechanical andIndustrial Engineering at the University of Iowa (UI; Iowa City, IA). "Thatwill be very challenging. But we can bioprint something that functions in asimilar manner and meets the needs of the patient. It's more realistic toprint a simulacrum that performs the same function rather than an exactreplica," Ozbolat told PlasticsToday. His research at UI on bioprintingblood vessels and pancreatic, bone, and cartilage tissue is advancing thattechnology. He will share his expertise next month at the MD&M Westexhibition and conference in Anaheim, CA, during a session titled, "Therealities, myths, and future potential of bioprinting."
