Cuenta una antigua leyenda queallá por el año 1773 se fundóuna villa con motivo de una pro-mesa. Domingo López deCarvajal, vizconde de Carrión ymarqués de Atalaya Bermeja, ju-ró durante una fortísima tormen-ta que amenazaba con hacerle aél y a su tripulación naufragar yacabar presa de un mar embra-vecido, que si salía bien paradode esa terrible experiencia en al-ta mar regresaría a tierra firme yfundaría una región en la sierramás profunda de Cádiz. Y así escomo se creó Algar, más conoci-da por aquellos tiempos comoSanta María de Guadalupe, de-bido a las reminiscencias reli-giosas mexicanas.

Situado al abrigo de la Sierra delas Cabras y rodeado por laSierra de Balconcillo y el Cerrodel Águila, además de discurrirjunto al pantano de Guadalcínse encuentra un sencillo y tran-quilo rincón de la serranía gadi-tana. Algar toma su nombre dela composición "al" y "gar",

que significa concavidad o cue-va en árabe, muy relacionadocon la multitud de cavidadesque pueblan la zona.

Tras los distintos episodios his-tóricos que ha vivido la región,este municipio perteneciente ala Sierra de Cádiz se ha nutridode los productos que le ha ofre-cido su propio terreno, pruebade ellos son los espárragos, ta-garninas, aceitunas y diversosproductos de la huerta. Y en re-lación a la caza mayor y menorcon ejemplares tan destacadoscomo la perdiz, el conejo, el ve-nado o incluso el jabalí. Aunqueel arte de la pesca también serádeterminante en su gastrono-mía, las aguas fluviales del ríoMajaceite ofrece especies tanpreciadas como el barbo, lascarpas o incluso las blacks-blass. Entre sus platos más co-nocidos y apreciados, destacarla sopa de tomate y la de ajo,sus piñonates y los roscos dehuevo y de aceite.

Dedicados por entero a la artesa-nía de la marroquinería y traba-jos elaborados en la madera, elturismo rural ha sido una piezaclave para el desarrollo de estalocalidad debido a los importan-tes recursos que ofrece este sin-gular paraje natural. Es muy variada. Destaca la caza mayor y menor: perdiz, conejo, venado, jabalí,el gamo, el faisán etc., y la cocina vegetariana a base de espárragos, tagarninas,aceitunas y productos de la huerta. Sus platos más típicos son el gazpacho, lasgachas, la tortilla de espárragos, las tagarninas sancochadas y también losguisos de caracoles y cabrillas. Mención especial a la carne de venado guisadaa las finas hierbas y en salsa. Y entre sus dulces y postres destacan los roscos dehuevo, las tortas de aceite, el piñonate y la carne de membrillo.

This town offers a varied cuisine, with game large and small includingpartridge, rabbit, deer, wild boar, fallow deer, pheasant, etc. Vegetarians arealso catered for with dishes such as asparagus, thistles, olives and orchardproducts. The most typical dishes are gazpacho, oatmeal porridge, asparagusomelette and cooked thistles and also dishes based on snails and kid. Wemust give a special mention to venison cooked with tine herbs and sauce.Among the sweets and puddings ring-shaped cakes made with eggs, olivetarts, pinonates, and quince preserves are outstanding.

Diese ist sehr verschiedenartig. Hervorzuheben sind beim Klein- und Großwild:Rebhuhn, Kaninchen, Rotwild, Wildschwein und andere. Und unter den vegetarischenGerichten: Spargel, Goldwurzel, Oliven und Erzeugnisse des Gemüsegartens. Dietypischsten Gerichte sind die kalte Gemüsesuppe Gazpacho, die Gachas [dickerMehlbrei], die Spargel- Tortilla, gekochte Goldwurzeln und auch die Schmortöpfe mitSchnecken und Sägebarsch. Eine besondere Erwähnung verdient das fein gewürzteWildfleisch in seinen verschiedensten Zubereitungen. Und bei den Süßspeisen undNachtischen: die Eierkränze, Öltörtchen, der Piñonate und das Quittenbrot.

En el mes de abril o mayo se celebra la subida de Algar, que congrega a grancantidad de aficionados al automovilismo, original acto en la provincia.También en mayo tiene lugar la feria de la Primavera o del Ganado. En juniotiene lugar la romería en honor al patrón de la villa, San Nicolás, con caravanade carrozas y caballos engalanados para la ocasión. En el mes de agostocelebran la Fiesta del Emigrante. En septiembre disfrutan de la Feria y Fiestasde Nuestra Señora de Guadalupe.

In the month of April or May the ascent of Algar is celebrated, bringing toge-ther a large number of motoring enthusiasts, an original event in the provin-ce. The Livestock or Spring Fair takes place in May. The Pilgrimage in honourof the Patron Saint of the town, San Nicolás (Saint Nicholas), takes place inJune, with caravans of coaches and horses decorated for the occasion. TheFestival of the Emigrant is held in the month of August. In September, theFair and Celebrations of ‘Nuestra Señora de Guadalupe’ (Our Lady ofGuadalupe) are enjoyed.

Autosportfans versammeln sich hier im April, wenn die Subida de Algarcelebriert wird, ein einzigartiges Ereignis der Provinz. Ebenfalls im Maifindet die Frühlings- oder Viehmesse statt. Im Juni wird die Pilgerfahrt zuEhren des Schutzheiligen des Städtchen, dem Heiligen Nikolaus, mitWagenkarawanen und eigens für die Gelegenheit herausgeputztenPferden gefeiert. Im Monat August wird die Feier des Auswanderersbegangen. Im September erfreut man sich des Volksfests und der Fiestasvon Nuestra Señora de Guadalupe.

Podemos destacar por ejemplo; la Cueva de la Dehesilla con restos de laépoca Neolítica; de la época moderna la Casa Consistorial, del siglo XVIII dearquitectura popular; la Iglesia Parroquial de Santa María de Guadalupe, deestilo neoclásico, planta rectangular y que recuerda a las iglesias allende elAtlántico y la Plaza de Toros, realizada en piedra y mampostería a principiosdel siglo XX. No debemos dejar de visitar el Palacio de D. Domingo López deCarvajal, fundador de Algar, construido en el siglo XVIII.

The Dehesilla Cavern, with its remains dating back the Neolithic Age is aninteresting part of the town's historical heritage. From the modern era, youmight like to visit the Casa Consistorial (Town Hall), from the 18th century withits popular architecture or the neoclassical Parish Church of Santa María deGuadalupe. The latter has a rectangular floor reminiscent of churches on theother side of the Atlantic. The bullring was built using stone and masonry at thebeginning of the 20th century. We must not forget to visit to the Palace of D.Domingo Lopez de Carvajal, founder of Algar, built in the 18th century.

Wir können beispielsweise die Höhle Cueva de la Dehesilla mit Überresten ausder neolithischen Epoche hervorheben. Bereits aus neuerer Zeite stammt dieCasa Consistorial (Rathaus) aus dem 18. Jahrhundert in volkstümlicherArchitektur. Die Pfarrkirche Santa María de Guadalupe im neoklassischen Stil,mit rechteckigem Grundriss erinnert eher an die Gotteshäuser jenseits desAtlantiks. Ferner die Stierkampfarena (Plaza de Toros), die aus Steinen undBruchsteinwerk zu Beginn des 20. Jahrhunderts ausgeführt wurde. Versäumensollte man keinesfalls, den im 18. Jahrhundert erbauten Palast von D. DomingoLópez de Carvajal, dem Gründer von Algar, einen Besuch abzustatten.

Legend has it that the town wasfounded in 1773 because of avow. Domingo Lopez de Carvajal,viscount of Carrion and marquis ofAtalaya Bermeja, swore an oathduring a terrible storm that wasthreatening to claim his own andhis crew’s lives and sink his ship.He promised that if they gotthrough this terrible experienceand back on dry land alive hewould found a settlement deep inthe mountains of Cádiz. This ishow Algar, known in those timesas Santa Maria de Guadalupe(thanks to the Mexican religiou re-miniscences) came into being.

Sheltered by the Sierra de lasCabras and surrounded by theSierra de Balconcillo and theCerro del Águila, alongside the

Guadalcin marshes, you will findthis simple, peaceful corner ofthe Cádiz Mountains. Algar takes

its name from the conjunction of“al” and “gar”, which mean ho-llow or cave in Arabic, and refersto the multitude of caves whichoccur in the region.

Nach einer antiken Legende wur-de um das Jahr 1773 wegen ei-nes Versprechens, gegebendurch Domingo López de Carva-jal, Vicomte von Carrión und Grafvon Atalaya Bermeja eine Stadtgegründet. Während eines star-ken Unwetters, durch das er unddie Besatzung seines Schiffs un-terzugehen drohten und Opferdes wilden Meeres zu werden, ge-lobte er, eine Region in der tiefs-ten Sierra von Cádiz zu gründen,sollte er von diesem fürchterli-chen Ereignis heil an Land zu-rückkehren. Und so wurde Algar,in jenen Tagen als religiöse Remi-neszens an Mexiko eher unterdem Namen Santa María de Gua-dalupe bekannt, geschaffen.

Im Schutze der Sierra de las Ca-bras gelegen und umgeben vonder Sierra de Balconcillo unddem Hügel Cerro del Águila, amSaum des Stausees von Guadal-cín befindet sich dieser schlichtestille Winkel der Sierra de Cádiz.Algar erhält seinen Namen ausder Zusammensetzung aus "al"und "gar", was im Arabischensoviel wie Aushöhlung oder Höhlebedeutet, in Anlehnung an diezahlreichen Höhlen der Gegend.

Im Verlaufe der verschiedenenhistorischen Zeiten hat sich diezur Sierra de Cádiz gehörendeGemeinde vorwiegend von denProdukten ernährt, die ihnen dieeigene Gegend bot. Beispielehierfür sind Spargel, Goldwur-zeln, Oliven und verschiedeneProdukte aus dem Gemüsegar-

ten. Beim Klein- und Großwildsind Besonderheiten wie Reb-huhn, Kaninchen, Rotwild undsogar Wildschwein hervorzuhe-ben. Auch die Kunst der Fische-

rei bestimmt die Küche, denn dieGewässer des Flusses Majaceitebieten solch geschätzte Artenwie die Barbe, Krapfen oder garBlass-Blacks. Zu den bekanntes-ten und beliebtesten Gerichtengehören die Tomaten- und dieKnoblauchsuppe, die Piñonates(Gebäck aus Pinienkernen, Man-deln und Honig) und die Kränzge-bäcke aus Eiern und Öl.

Dem Kunsthandwerk der Leder-waren und Holzarbeiten vers-chrieben, wurde für diesen Ortder rurale Tourismus zu einemSchlüsselelement für die Entwic-klung, aber auch die besonderenEigenschaften dieser einzigarti-gen Naturlandschaft: die Ruheund Stille seiner Täler, die Rein-heit der Gewässer und die Le-bensqualität sind einige der Rei-ze Algars, die dem Besucher un-vergesslich sein werden.
