EDITORIAL | EDITORIAL CLASES DE PANADERÍA | BAKING LESSONSDurante más de una década, Hotel Monasterio ha colaborado con el Orfanato Santa Rosa en Lamay, un pueblo ubicado en el Valle Sagrado del Cusco. Al terminar el colegio cada día, las 70 niñas que viven allí hacen lindos trabajos en cerámica y textiles como fuente de ingresos. A fin de ayudar a mantenerse, el orfanato ha abierto recientemente una panadería y el chef panadero Stephane Chambelant estuvo feliz ofrecer algunas recetas y dar consejos. Se les enseñó a hornear galletas y pastas sencillas que podrían vender a transeúntes. Luego de la lección, el personal del hotel, incluyendo al Gerente General Stephan Post, compartieron pizzas y gaseosas con las niñas y jugaron voley.

For over a decade, Hotel Monasterio has been working closely with Santa Rosa Orphanage in Lamay, a town located in Cusco’s Sacred Valley. The 70 girls who call this place home make beautiful pottery and textiles after school to sell as a means for income. To help sustain themselves, the orphanage recently opened a bakery and Hotel Monasterio’s baker Stephane Chambelant was delighted to visit to offer his professional guidance and tips. They were taught how to bake cookies and simple pastries that they could then sell to tourists who stop by. After the baking lesson, hotel staff members including General Manager Stephan Post, shared pizzas and soda with the girls and played volleyball in the school patio.

The Ecosite is a wonderful program, which was initiated in 2001 by Machu Picchu Sanctuary Lodge and Perurail.As always, Orient-Express’ staff members are strongly committed to giving back to the people and communities that make Peru such a unique and diverse country. In Cusco, we had a great holiday season and welcomed groups of students and artisans to celebrate with us at Hotel Monasterio and Hotel Rio Sagrado. At Miraflores Park Hotel in Lima, our hotel and office staff are enthusiastically participating in our recycling programs. ACTIVIDADES NAVIDEÑAS | CHRISTMAS ACTIVITIES

Durante el mes de diciembre, las propiedades de Orient-Express en Perú recibieron a miembros de comunidades de bajos recursos para compartir la alegría navideña. Miraflores Park Hotel invitó al coro de niños de Red Musical, una asociación que agrupa a niños talentosos de zonas deprimidas, el 1 de diciembre para inaugurar el calendario de actividades navideñas. Los niños estuvieron muy contentos de participar y cantaron lindos villancicos en la escalera a la entrada del hotel, para luego disfrutar de chocolate caliente y galletas.

Hotel Monasterio también invitó a seis coros de niños a participar en un concurso de coros que se realizó en el Patio Principal del hotel. Además, se organizó una feria navideña a fin de que los artesanos locales tuvieran un espacio para vender sus productos, desde pinturas, cerámica, joyería, esculturas, tarjetas de navidad y más. Las donaciones se hicieron en favor de las obras de caridad locales y del ganador del concurso de coros.

Finalmente, Hotel Río Sagrado abrió sus puertas a 185 niños de una escuela cercana en Urubamba para ofrecerles chocolate caliente y panetón, un bizcocho tradicional con frutas secas azucaradas que se sirve en todo el Perú.

Over the festive period, Orient-Express’ Peru properties invited underprivileged members of their local communities to join in the Christmas cheer. Miraflores Park Hotel invited a children’s choir from Red Musical, an association that groups talented children together from low income areas, on December 1st to inaugurate the Christmas festivities. The children were excited to participate and sang beautiful carols on the hotel’s front steps, before enjoying hot chocolate and cookies following the recital.

Hotel Monasterio also invited six children’s choirs to take part in a choir competition that was held on the hotel’s Main Patio. A Christmas market was also set up where local artisans could sell their products ranging from paintings, ceramics, jewellery, chocolates, sculptures, holiday cards, and more. Proceeds went to local charities and also towards the choir competition winner.

Finally, Hotel Rio Sagrado welcomed 185 children from a nearby school in Urubamba to enjoy hot chocolate and ‘panetón’, a traditional holiday bread with candied fruit that is served in all of Peru.

Miraflores Park Hotel and the Orient-Express Peru Corporate office have initiated fantastic recycling programs over the last few months. In association with local organization Fundades, the hotel has developed a paper recycling campaign where staff members can drop old newspapers, magazines, and paper into large 20 kilo bins placed near office areas. Once these bins are full, Fundades picks them up and keeps a tally of the total amount collected by the company. For every 1600 kilos of paper, Fundades pays a scholarship for children with Down syndrome or living in extreme poverty in areas of Lima such as Comas and

En asociación con la organización Fundades, el hotel ha iniciado una campaña de reciclaje de papel por la cual los miembros del personal pueden dejar periódicos viejos, revistas y papeles en grandes contenedores de 20 kilos colocados en las áreas de oficinas. Una vez llenos estos contenedores, Fundades los recoge y lleva la cuenta del monto total recolectado por la compañía. Por cada 1600 kilos de papel, Fundades paga una beca para niños con síndrome de Down o niños que viven en extrema pobreza en áreas de Lima tales como Comas y Carabayllo. Además Fundades recibe artículos que están fuera de uso, tales como toallas, sábanas, pantuflas y batas, y las dona a hogares de ancianos de parte del Miraflores Park Hotel.

proporciona beneficios financieros a la economía local y crea conciencia y orgullo en la comunidad acerca de su patrimonio cultural. Si bien el hospedaje es simple y rural, deberá contar con instalaciones que cumplan con los estándares para extranjeros.

El personal de Guest Relations, Alimentos & Bebidas y Ama de Llaves de Hotel Monasterio y Hotel Río Sagrado dictaron talleres para un grupo de miembros de la comunidad. Las primeras lecciones fueron un importante incentivo para los estudiantes que daban sus primeros pasos en la industria del turismo.

In order to aid development of business projects in the Mullak’as-Misminay community, near Cusco, Orient-Express joined Condor Travel’s initiative for training community members in proper hospitality practices so that they may one day offer Community-based tourism.The concept of Community-based tourism means that members of a low income community offer overnight accommodation to tourists in their homes. It allows tourists to discover typical customs while bringing financial benefits to the local economy and building awareness and pride in the community on their rich cultural heritage. While accommodation is simple and rural, it must have facilities of sufficient standards for foreigners. Guest relations, F&B and Housekeeping staff members from Hotel Monasterio and Hotel Rio Sagrado led workshops with a group of community members. The first lessons were an important incentive for the students taking their first steps in the tourism industry.

Carabayllo. Fundades also accepts materials that are no longer of use, such as towels, sheets, slippers and robes, and donates them to senior homes on behalf of Miraflores Park Hotel.

The recycling program also extends to printer ink cartridges, where we have liaised with HP to collect all our used ink cartridges which are then sent to a recycling center in the United States. The special facility breaks down the cartridges into raw material like plastic and metal to be reused in a wide variety of products such as auto body parts, clothes hangers, fence posts and new ink cartridges.

Two years ago, Cusco was devastated by harsh rainfall and sudden flooding of the Urubamba River. Unfortunately, one of our most promising eco-projects was severely damaged as the river swept away the grounds of the Ecosite Center for Agroecology Training. Thanks to the joint efforts of Machu Picchu Sanctuary Lodge, Perurail and the “Instituto Superior Tecnológico Vilcanota”, we are pleased to announce that the program was resumed last July.

Groups of students between the ages of 18 and 26, from communities such as Sicuani, Acomayo, Urubamba and Calca, enroll in the month-long program to learn how to produce organic vegetables. Aside from these classes, students are provided with a nutritious diet, housing during the course, and entertainment and access to sports facilities and weekend trips.

The on-site facilities, which include classrooms, organic vegetable gardens and greenhouses, have been renovated and are now blossoming with lettuce, zucchini, pumpkin, carrot, radish, tomato, beet, and aromatic herbs such as oregano, basil, parsley, cilantro, fennel and mint. Students, who are taught by an Agronomist and an Agricultural Technician, are given lessons on how to adapt the products to become hotel suppliers in the future, how to identify and treat insects and plagues, and how to make compost from organic residue.

They also receive lectures on Training for Product Sales taught by the Machu Picchu Sanctuary Lodge team so they

may easily enter the market in Cusco with their products. Further to this, the NGO Kallpa offers a lesson on Entrepreneurship to motivate students to innovate and generate goods and services in an ethical, creative and effective way.

Hace dos años, el Cusco se vio devastado por fuertes lluvias y repentinas inundaciones del Río Urubamba. Lamentablemente, uno de los proyectos ambientales más prometedores fue severamente dañado ya que el río arrasó con los campos del Centro de Capacitación Agroecológico Ecosite. El programa se reanudó en Julio del 2011 gracias al esfuerzo conjunto de Machu Picchu Sanctuary Lodge, Perurail y el “Instituto Superior Tecnológico Vilcanota”.

Grupos de estudiantes entre 18 y 26 años de comunidades tales como Sicuani, Acomayo, Urubamba y Calca se matricularon en el programa de un mes para aprender a producir vegetales orgánicos. Aparte de las clases, a los estudiantes se les brinda una dieta nutritiva, hospedaje y entretenimiento en forma de videos, instalaciones deportivas y paseos de fin de semana.

Las instalaciones, que incluyen aulas, jardines de vegetales orgánicos e invernaderos, han mejorado y ahora están floreciendo con lechuga, zapallito italiano, zapallo, zanahoria, rabanitos, tomate, beterraga, y hierbas aromáticas tales como orégano, albahaca, perejil, culantro, hinojo y menta. Un Ingeniero Agrónomo y un Técnico Agrícola enseñan a los estudiantes a adaptar los productos para convertirse en el futuro en proveedores de los hoteles, a identificar y controlar los insectos y las plagas, y a hacer abono de residuos orgánicos.

También tienen charlas sobre Comercialización, Costos y Presupuesto dictadas por el personal del Machu Picchu Sanctuary Lodge para que puedan entrar fácilmente al mercado de Cusco con sus productos. Además, la ONG Kallpa ofrece una charla sobre el manejo de una Microempresa para motivar a los estudiantes a innovar y a generar bienes y servicios de manera ética, creativa y eficaz.
