Repaso de GUSTAR
We use the verb GUSTAR when we want to say that someone likes something. But I remember my Spanish teacher saying that GUSTAR was a weird verb … why?
Because we only use these two forms of the verb: GUSTA & GUSTAN
Because instead of SUBJECTS (yo, tú, él, nosotros, etc.) we use INDIRECT OBJECT PRONOUNS.

Stem Changing Verbs
A.K.A. Boot Verbs
When you see an ___________________________ followed by ________________________________, it shows that
you are dealing with a stem changing verb. Ex: almorzar (ue), merendar (ie)
Stem changing verbs conjugate just like regular verbs, with one extra little twist. Let’s review the steps for conjugating a
regular –AR, -ER, or –IR verb.

POLVORONES
¼ lb. butter ½ c. granulated sugar ¼ c. confectioners' sugar 1 egg 2 c. all-purpose flour, sifted ½ tsp. baking powder ¼ tsp. salt ¼ c. sugar 1 tbsp. cinnamon Preheat oven to 375 degrees. Cream butter with the 2 kinds of sugar until very creamy and light. Add egg, beating well. In a separate bowl, mix baking powder, salt and flour. Add to cream mixture in thirds. Roll out on floured board to about 1/4 inch thickness. Cut with cookie cutter (smallest available), or roll into teaspoon size balls. Place on greased cookie sheet and bake for approximately 12 minutes, until light gold in color. Sprinkle with mixture of sugar and cinnamon while still hot. Yields: about 2 ½ dozen.
SALSA VERDE
¾ lb. tomatillos, husked and quartered (or purchased canned at Woodman’s or possibly WalMart) 2 serrano or jalapeño peppers, coarsely chopped ¼ small yellow onion, sliced 1/3 cup water 1 teaspoon salt, or as needed 1/3 cup coarsely chopped fresh cilantro In a blender or food processor fitted with a metal balde, combine the tomatillos, chilies, onion and water; process briefly until chunky. Add the 1 teaspoon salt and the cilantro and purée until no large chunks remain, about 2 minutes longer. Taste and add more salt, if needed. Pour into a bowl and serve, or cover and refrigerate for up to 3 days.
SALSA ROJA
2 cups tomatoes, seeded and chopped ½ cup cilantro, chopped 6 cloves fresh garlic, chopped ½ of an onion, chopped 1 jalapeño pepper, seeded and finely chopped 1 teaspoon salt Mix all ingredients well. Lightly mash with back of fork for about 10 seconds to help release juices. Refrigerate overnight for maximum flavor.
HORCHATA (Ground Rice Drink) Yield: 12 servings 2 c Long Grain Rice 8 c Milk 1 c Sugar 2 tsp Vanilla 1 tsp Cinnamon Ice Place the uncooked rice in a bowl with enough hot water to cover. Let sit overnight. Next day, remove the water. Blend ½ cup of the rice and 2 cups milk in a blender until the rice is all ground up. Mix in ¼ cup sugar, ½ teaspoon sugar, ½ teaspoon vanilla, ¼ teaspoon cinnamon. Strain through cheesecloth or other fine strainer. Repeat process with other half of the ingredients. Serve over ice.
SOPAIPILLAS
1/4 teaspoon salt (optional) 1 tablespoon baking powder 2 1/2 cups + all-purpose flour 1 cup milk or water 2 tablespoons sugar Cooking oil for frying Note: Make sure to shake and level off the flour with a knife. Mix the dry ingredients and then add water or milk. Mix and knead a little until dough forms a ball. (Add a small portion of flour to the counter if it sticks too much.) Roll out dough using a rolling pin. Form into shapes using a knife or a cookie cutter. Fry in a preheated 425 degree F. oil until slightly brown on one side and then turn over. Place on paper towels and let it soak up the excess oil. Serve with honey, top with white sugar or powdered sugar.
MOLE SAUCE
2 teaspoons vegetable oil 1/4 cup finely chopped onion 1 tablespoon unsweetened cocoa powder 1 teaspoon ground cumin 1 teaspoon dried cilantro 1/8 tablespoon dried minced garlic 1 (10.75 ounce) can condensed tomato soup 1 (4 ounce) can diced green chile peppers
Heat the oil in a medium saucepan over medium heat, and cook the onion until tender. Mix in cocoa powder, cumin, cilantro, and garlic. Stir in the tomato soup and green chile peppers. Bring to a boil, reduce heat to low, cover, and simmer 10 minutes.
CHUNKY GUACAMOLE
½ small onion, chopped 2 to 3 serrano peppers or 1 to 2 jalapeños, stemmed, seeded and very finely chopped 1 ripe, medium-large tomato, cored and very finely chopped 1 clove garlic, peeled and very finely chopped 10 sprigs fresh cilantro, chopped 3 ripe, medium-size avocados Salt, about ½ teaspoon juice of ½ lime In a medium-size bowl, mix the onion, peppers, tomato, garlic and cilantro. Halve the avocados lengthwise. Twist the avocado halves in opposite directions to loosen the meat from pits, then scoop out the pits, and reserve. Scrape the avocado pulp from the skins and add it to the bowl. Using a fork or a spoon, roughly mash the avocado while mixing in the other ingredients, making a course thick mass. Flavor with salt and lime juice, mix again to blend all ingredients. Return the pits to the guacamole to prevent browning. Cover tightly with plastic wrap.
CHORIZO AND BEAN DIP
1/2 lb. Chorizo (found at Woodman’s or maybe WalMart) 1 can Black Beans 1/2 cup Onion chopped 8 oz. can Tomato Sauce 2 Tbsp. Taco Sauce 3/4 cup Cheddar Cheese shredded 2 1/4 oz. can Black Olives sliced 1/4 cup Scallions or Green Onions, chopped Brown chorizo in a nonstick skillet. Drain on paper towels. Cook beans and onions, covered, over medium heat for approximately 5 minutes. Stir occasionally to separate vegetables. Mash beans slightly. Combine with chorizo, tomato sauce, and taco sauce. In a separate area, combine cheese, olives and green onions. Stir one half the cheese mixture into bean mixture. Pour mixture into a 1-quart baking dish and bake in a 350 degree F oven for 25 minutes, or until bubbly around edge. Top with remaining cheese mixture. (We will do this at school after we reheat the dip in the microwave.)
