que ofrece la ciudad de Alicante. Tanto en su cocina tradicional como en la llamada cocina de autor o de vanguardia. la dieta mediterránea siempre está pre-sente. Pescados y mariscos, junto a arroces, salazo-nes, frescas verduras y legumbres, frutas y especias conforman un completo mosaico para el deleite de los más exigentes paladares. Todo ello, regado con los justamente reconocidos vinos y culminado con una excelente repostería.
Hemos elaborado la mejor selección de restaurantes que destacan por su cocina, la calidad del servicio e instalaciones. No hemos querido olvidar a aquellas prestigiosas empresas que con el suministro de sus materias primas hacen que la alta restauración alican-tina sea una realidad.
Ha sido todo un lujo contar con la colaboración del maestro Martín Berasategui, considerado como uno de los mejores cocineros del mundo y el único chef en España con siete estrellas Michelín, y de otro referen-te a nivel mundial, nuestro paisano Paco Torreblanca.

With this Guide in your hands you are able to enjoy the wide gastronomic variety and quality that the
city of Alicante offers. Both in the so-called traditional cooking and the signature cuisine or the avant-garde cuisine, the Mediterranean diet is always involved. Fish and seafood together with rice, salted fish, fresh vegetables and legumes, fruits and species represent a full mosaic pattern to the great delight of the most refined palate. All of this paired with fairly well-known wines and topped with an excellent confectionery.
We have developed our best selection of restaurants that have an outstanding cuisine, a great quality of service and good facilities. We have not forgotten these renowned companies that provide these raw materials which enable the Haute Cuisine from Ali-cante to come true.
It has been a luxury to have the invaluable support of the Master Martín Berasategui, recognized as one of the best Chefs in the world and the only Chef in Spain awarded with 7 Michelin stars, and another worldwide referent and native Confectioner, Paco Torreblanca.

Es un honor para mí poder prologar una
guía que tiene como ob-jetivo la mejor difusión y promoción de la gastro-nomía y los vinos de una región tan apasionante como ésta. No conocía en profundidad Alicante hasta que mi buen ami-go Rafael García Santos trasladó su congreso “Lo mejor de la Gastrono-mía” a estas tierras y ello
me llevó a poder disfrutar de primera mano de una culinaria con mucha más enjundia y rique-za de la imaginada, con chefs de altísimos vue-los y productos autóctonos de primer nivel.
No exagero si digo que una de las mayores sorpresas de mi trayectoria me la he llevado al adentrarme a fondo en la gastronomía alican-tina. He podido desterrar esa falsa creencia de que la cocina de esta zona se limita al arroz y he descubierto entusiasmado la cocina de la costa, la de la huerta, la de la meseta e incluso la de la montaña, cada una con sus peculia-ridades y recetas antológicas. Todas tocadas por ese halo mediterráneo, tan sugestivo y apetecible.
Lo mismo me ha ocurrido con sus produc-tos, desde el aceite de montaña, perfectamen-te afrutado y con su puntito picante, pasando por su atractiva despensa de quesos, sus con-tundentes embutidos, hasta su golosa repos-tería, mucha de ella de origen árabe, por citar
solo algunos ejemplo, y sin olvidarme, por su-puesto, de sus interesantísimos vinos.
Quiero hacer un punto y aparte para men-cionar el caso de los turrones, de la calidad más extraordinaria que se puedan encontrar en el mundo, y sé de lo que hablo porque mi colaboración con el maestro de turroneros José Enrique Garrigós para la línea selecta Martín Berasategui me ha llevado a “bucear” en ese inigualable proceso artesanal que, en este caso, unido a una metodología innovadora produce uno de los dulces más auténticos y de-liciosos que podamos adquirir en el mercado.
Podría pasarme horas contando anécdo-tas y festines inolvidables que he podido vivir por estas tierras, visitando casas de amigos
que están haciendo las cosas más que bien, con una ilusión y una entrega inusitada, pero no quiero aburrir al personal y no me cabe la duda de que lo interesante de esta publicación empieza a continuación de este prólogo.
Así que no pierdan el tiempo y adéntrense en las próximas páginas que la gastronomía y los vinos de Alicante están en un momento esplendoroso y merecen que nos recreemos a gusto. ¡Salud!

I have the honour of writing the prologue of
this Guide aimed at the spread and promotion of the gastronomy and wines of this passion-ate region of Alicante. Thanks to my friend Ra-fael García Santos, who brought to Alicante his Congress “Lo mejor de la Gastronomía”, now I have an in-depth knowl-edge of this land and
since then, I have enjoyed first-hand a culinary with much more substance and wealth than I had ever imagined, with high-powered chefs and first level native products.
I would not be exaggerating if I said that stepping into the gastronomy of Alicante has been one of my biggest surprises. I have clearly banished the assumption that the cuisine in this area is restricted to rice and I have discovered with excitement the cuisine from the coast, the local products of the gar-den, the cooking in the plateau and even the mountain cooking, each one with its unique features and selected recipes and all of them with the impressive and tempting Mediterra-nean touch.
Likewise, the products of the area are ap-pealing, from the fruity and spicy oil of the mountain, the attractive cheese pantry, the strong sausages, to its sweet confectionery, mainly of Arabic origin, to quote a few exam-
ples, and of course, without leaving out its in-teresting wines.
I would like to mark a break to mention Nougat, “turrón” of the highest quality in the world, and I know what I am talking about be-cause my collaboration with the Master Nou-gat Chef José Enrique Garrigós for the Martín Berasategui select line led me to “dive” into that unique handmade process which, togeth-er with a leading-edge methodology can pro-duce one of the most genuine and palatable sweets in the market.
I could go on for hours telling unforget-table stories and feasts I have enjoyed in this land, visiting friends who are doing their best with unprecedented enthusiasm and dedica-tion, but I do not intend to bore the reader as
the interesting section of this Guide starts af-ter this prologue.

Vino de color amarillo pajizo con reflejos verdosos. Limpio con una gran brillantez. En nariz destaca por intensidad con predominio de notas frutales (manzanas ácidas y verdes) y cítricas (limones). Presenta ligeros recuerdos florales, característicos de la variedad albariño (flores blancas) en boca la entrada es fresca, desembocado en sensaciones de amplitud y robustez, para finalizar con un recuerdo a perfumes delicados y complejos. Presenta un buen equilibrio entre acidez y alcohol.
Straw yellow colour with greenish highlights. Clean and very bright. On the nose its intensity is highlighted with a predominance of fruity (acid and green apples), and citrus (lemons) notes. Slight floral hints, characteristic feature of the “Albariño” grape variety (white flowers). The palate entrance is fresh, leading to intensity and robustness, to finish with a remembrance to delicate and complex fragrances. Good balance between acidity and alcohol.

Made from the best grapes at the optimal maturity of the grape, these wines are later aged in barrels. Laudum Crianza has been 12 months in American and French new oak barrels.Dark cherry in colour, the aroma is rich in spicy and vanilla nuances perfectly integrated with the oak, which brings a balance in fleshiness, structure and tenacity on palate characteristic of a full-bodied wine. Best served at 17º.

Rojo rubí con ribete dorado. Aromas a vainilla, frutas y especias. Elegante, sabroso y largo.Elaborado de 20 a 30 días a temperatura entre 28º y 30º, crianza de 30 meses en barrica de roble francés y americano, con diferentes tostados para potenciar los aromas y 36 meses en botella.
Rubicon red with golden rim colour. Aromas of vanilla, fruits and spices. Elegant, tasty and long.Produced with a fermentation control at a temperature of 28º-30º and 20 to 30 days of maceration. Aged for 30 months in French and American oak, with different toasty smells to improve the flavours and then left for a further 36 months in the bottle.

El Fondillón es un vino exclusivo de la Denominación de Origen Alicante y protegido por el Reglamento de
la Unión Europea 607/2009.
Se trata de un vino realizado con 100% de monastrell sobremaduradas en la cepa y con envejecimiento míni-mo de 10 años. En su fermentación únicamente inter-vienen levaduras autóctonas y la riqueza alcohólica ad-quirida deberá ser de fermentación natural. Esta es una condición que lo diferencia de otros vinos exclusivos y que le da el valor enológico que hoy en día tiene.
Las Sacristías donde se envejece el Fondillón en las bo-degas son lugares únicos, unidos a la tradición familiar de sus dueños. Y es que el Fondillón está lleno de his-torias.
Las historias de las realezas por donde ha pasado y las historias de las generaciones que lo velan en cada uno de estos oscuros rincones.
Un producto único, lleno de intensidad y de pasión, para grandes expertos, grandes momentos o para inti-midades excepcionales.
Sólo 11 bodegas están autorizadas en el mundo por el Consejo Regulador para elaborar este producto.
The Fondillón wine is produced exclusively under the protected denomination of origin of Alicante and it is
ruled by European Union regulation 607/2009.
Fondillón is a type of wine produced from 100% of the Monastrell grape variety which has been over-ripened on the vine and aged for 10 years. In the fermentation procedure only local yeasts are used and its alcoholic wealth must be produced naturally. This is a feature that gives Fondillón a unique difference to other types of wines and provides its enological value.
The wine cellars where the Fondillón is aged are named ‘sacristias’. This specific place within the cellar is a special place for the wine maker. The Fondillón is surrounded by tradition at every stage.
The Fondillón has a regal history as it has been chosen by kings. It is an important legacy for the wine makers, whose production has been passed down through generations. As a result, Fondillón is a unique product which is intense and full of passion appreciated by wine experts, used for celebrations or enjoyed more intimately.
There are only 11 wineries which are allowed to produce Fondillón wine, authorized by the regulating council of Alicante
