Mix this and then the batter into cups. Fill about half of the cups with bat-ter. Set in the oven for 10-12 minutes 392° F. (200° C)
THE FILLING: 100 gram Butter2 tsp Flour4 tbs Sugar4 tsp Cacao1 dl Milk1 dl Whipping Cream
THE BEST CHOCOLATE BROWNIES EVER
Melt the butter in a saucepan. Add flour, sugar and cocoa. Stir into a smooth batter. Add the flour and cream and boil until it thickens, about 5 min-utes, and allow to cool slightly. Pour the batter into the cups (not that it covers the entire cake but leave a small border around). Then set them in the freezer and allow to harden. And then you just pick them up just before they should be served. They taste almost the best a bit half thawed. Serve with some berries and a dollop of whipped cream.

summer day with my big sister Diane (I only had big sister’s and a single mom at home for quite awhile, which explains a lot about me in gen-eral), I want-ed to float in my blue plastic boat, recently pur-chased from Thrifty Drug store for about two bucks. Not seeing it right away I asked my sister, “Have you seen my boat?” She said, ”What boat?” I said, “my blue boat.” she said, “what blue boat?” I replied, “My bright blue boat.” Then she offered, “ you mean your bright blue boogaloo boat?” “Yes, in-
deed, my bright blue beautiful boogaloo boat is what I seek!” “Maybe Buffalo Bill has it?” she cajoled. Now at this point in the story

Chapter 1
XThe Bishop of Kilfenora
On our first full day in Ireland we started off from our B&B in the usual manner, headed towards the Cliffs of Moher, the desolate Burren, and Galway Bay of song and story. One of the ad-vantages of having a rental car is that you can stop whenever you like, so we stopped at a lovely old church in Lahinch and I photographed some of the high crosses in the cemetery. We would come across a lot of these high crosses over the fortnight we were in Ireland and they all seemed to be differ-ent. This church had become a ruin but some of the graves were still kept up in the cemetery.
The other thing that is great about having a rental car is that you don’t have to stop. When we approached the Cliffs of Moher two tour busses had just pulled in ahead of us and large groups of tour-ist were already streaming across the road from the car park to the visitors center. We decided to avoid the crowds and kept going. Further on, at Doolin, we were able to look back and see the cliffs from a decidedly different point of view. Unconventional from the start, we continued to find parts of South-western Ireland that were fascinating even though far from the usual tourist path. Come along and join us. Now and again we will be ordinary tourists, but most of the time our tales will tell of offbeat discoveries and experiences.

Driving in another country is always exciting as you navigate unfamiliar territory in an unfa-miliar vehicle. Doing so in a country where you are also driving in the lane that usually contains oncoming traffic is unsettling.
Being passed, at high speed, on your right hand side by traffic coming in the other direc-tion (when usually all that is at your right is the passenger who is giving you grief for missing the turn) is unnerving. Most harrowing is do-ing all this on very narrow roads that are lined with rock walls covered with hawthorn hedges. Sometimes those rock walls are all that is be-tween you and a drop down into the sea. This is a vacation?
Fortunately, I never had to drive while we were in Ireland. Charlie quickly figured out how to tell if we were too close to the rock walls without actually having to run into them, and learned to ignore those folks swooping by on his right. Occasionally I had to remind him that he was in the wrong lane and might want to move into the left lane, but overall he was stel-lar! My job was to navigate and figure out which road on the roundabout would take us where we were going. Honestly, the signs were mostly really good, so it wasn’t that difficult. Overall it was fun to go our own way, but it was really exhausting. That meant more time on foot exploring towns and turning in early at night.
Although Doolin, where we viewed the cliffs from the north, is a hotbed of traditional Irish music, the draw for us was that it is the start of the wild and desolate Burren. The worn limestone of the Burren, with almost a moon-scape look to it most of the year, has been eroded by water. In the spring the wildflow-ers growing up in the spaces between the rocks soften it. Glad we were there in May.

From Doolin we headed inland to Kilfenora and the Burren Heritage Center where we learned a lot about the Burren bot-any and geology. We parked right out front and seemed to be the only visitors. It is an old-fashioned museum with wonderful staff. Next we walked a half a block to an ancient church; St. Fachnan’s Cathedral ruins. Not too many people get to either of these places, making it an unspoiled corner of Ireland.
St. Fachnan’s is built on a monastery ruin. By local tradition, the Pope is regarded as the bishop of Kilfenora in perpetuity. Kilfenora was the smallest and poorest diocese in Ire-land during the time of the potato famine. Because they were barely able to hold it to-gether, the Pope became bishop in 1866, a very unusual situation.
Legend holds that the Cathedral had been dedicated to St. Fachnan and built in about 1189. There is a bishop’s head over a carved window in one wall but that could have been from an ear-lier time, too.

Fresh pasta salad with tomatoes, basil & cheese
1 pound cherry tomatoes quartered4 cloves garlic, finely chopped1 small bunch basil, torn + extra to garnish1/3 cup extra-virgin olive oil Salt and freshly ground black pepper
1 cup freshly grated Parmesan cheese1 pound penne pasta4 tablespoons toasted pine nuts
Combine basil, tomatoes, garlic and oil in a salad bowl and mix well. Season with salt and pepper.Preheat the oven to 425 * F. Line baking sheet with parchment paper. Sprinkle the cheese onto the paper in a thin layer and bake until melted together and golden, about 5 minutes. Remove from the oven and let cool and crispen.
Cook the pasta in salted boiling water until al dente. Drain and rinse under cold water. Drain again and dry on a clean kitchen towel.Add the pasta to one bowl with the tomato mixture. Toss well.Break the baked cheese into pieces and arrange on the pasta. Garnish with the basil and pine nuts and serve.
